For keeping eating-quality fish, an ice slurry (ice plus saltwater) beats bagged ice on dry fish — it drops the temperature faster and keeps it lower.
Rotomoulded boxes hold ice three to five times longer and survive being stood on, dropped and used as a casting platform. They cost three times more and weigh more empty. If your fish and drinks need to survive a 35°C day, they're worth it; for a few hours at the pier, a standard esky is fine.
25–35 litres handles a day trip's fish and drinks for two people. Offshore or overnight, step up to 55 litres plus.
You really can't in Australian heat — at minimum use frozen bottles. An ice slurry (ice plus a little saltwater) keeps fish in far better condition than dry ice contact.
